Make it sweeter in 2017 : side dish edition

I’m not much on making new year’s resolutions. Seems to be a good way to set yourself up for failure yet to start all over again the next year. Although, I do believe in making changes for the better. So for the next few posts, I will let you in on some fun stuff! Let’s make 2017 a sweeter year than the last. MAKE 2017 COUNT!

Since most of us are on a health kick after the holidays, join me if you’d like in deciding not to use canned vegetables! Shop on the outsides of the grocery store for your fresh vegetables or even better try your local fresh produce stand! Steering clear of all canned vegetables! This side dish is so yummy + healthy! You can use the same ingredients on any fresh vegetables and get the perfect side dish full of nutrition + fiber. I don’t know why but I’m not much on a cold salad in the winter so this is our way of getting our veggies in our diet.




  • 1 Zucchini
  • 1 Squash
  • 1 Broccoli Bunch
  • Extra Virgin Olive Oil
  • Lemon Pepper Seasoning
  • Shredded Parmesan


Chop up your veggies and place in a bowl. Place parchment paper on a cookie sheet. Can I just tell you I have discovered these perfectly sized pre cut sheets!! They are a dream! No more jagged edges. Just a nice clean perfect sheet.


Add 2-3 Tbsp Extra Virgin Olive Oil and 1 Tbsp Lemon Pepper Seasoning. This may vary depending on how much you are preparing. Toss your chopped veggies, olive oil, and lemon pepper in a mixing bowl. Once seasonings are mixed spread on your cookie sheet then sprinkle with parmesan cheese.

Bake at 400 degrees at 35-40 minutes until cheese is golden. That’s it!!


We almost had it eaten before I got a finished picture!! I could seriously eat the entire thing! Seriously so good the kids eat it like chips.
